많은 사람들이 헷갈려하는 건 우리가 영어로 말할 때 모든 종류의 스파클링 와인을 샴페인이라고 말하는 거죠.
And I think what confuses many people when we speak English, we always say Champagne to every kind of sparkling wine.

하지만 진짜 샴페인이 어떤 것인지 확실히 하고 싶어한다고 생각해요. 맞아요. 저희는 고유의 샴페인을 보호할 수 있도록 확실하게 운영하고 있습니다. 그리고 가장 큰 장점은 오직 샹파뉴 지역에서 생산되는 샴페인이라는 점 입니다.
Yeah, we have stronger appellation and strong protection, and it's a good thing because we have only Champagne from Champagne.

We're at the epicentre of the estate, where we have all our barrels. The work we do here is special and requires precision.

Can you explain a bit about the barrels?

저희는 2016년부터 스테인리스 스틸 통을 사용하지 않고 있습니다 그리고 2016년부터 계속 실험을 해왔죠.
We stopped working with stainless steel barrels since 2016. And since then, we have continued experimenting,

저희는 아르곤 숲의 나무로 오크통을 제작합니다. 이 숲의 정보를 얻기 위해 추적하고 역사를 파악하죠
We make our oak barrels using trees from the Argonne Forest. To obtain information about this forest, we traced and geo located it to understand its history.

We have the age of the oak, the number of oaks, and the geolocation.

This is the height of the tree. We work with different heights of trees

because the height of the trees has a significant effect on the wine. The traceability of oak is as important as the traceability of the grapes in my opinion.

스테인리스 스틸 통으로 숙성한 샴페인을 맛보는 데 더 익숙한 것 같아요. 오크통으로 만들어진 와인의 맛과 향의 차이를 설명해주면 좋을 것 같아요.
I think we are more used to tasting champagne that's aged in stainless steel. Perhaps you can describe that difference in the taste and smell of the base wine?

(오크통을 쓰는) 가장 큰 장점은 와인을 맛보면 실제로는 훨씬 더 섬세하고, 훨씬 더 부드럽고, 훨씬 더 우아합니다. 와인 맛을 훨씬 섬세하고 정확하게 구현할 수 있죠.
The greatest advantage of the oak barrels is that the wines are much finer, much smoother, and much more elegant. There is more precision and depth in the taste.

여긴 어떻게 보면 제 세계인데 배럴로 가득하죠. 뒤를 보시면 와인 글로브라고 저에게는 여기가 시작점 입니다. 와인이라는 결과물을 만들어내는 시작점이죠.
I am surrounded by barrels - which are my world. Right behind you, is the 'Wine Globe.' This is the starting point for me. The starting point, and without meaning until we get any results.

Here's another underground space. It's bigger than it looks.

앙리지로 영지의 포도는 90년대부터 수확된 아주 오래된 포도들 입니다. 30년 이상 수확해온 포도 입니다. 마법같죠.
The grapes of the Henri Giraud estate are very old, and harvested since the '90s. it's a compilation of all the harvests over the last 30 years, like magic.

그럼 2차 발효가 어떻게 이루어지는지 설명해 주시겠어요?
So maybe you can explain a little how the second fermentation works?
- Sébastien Le Golvet
네. 2차 발효는 인내심이 필요한 과정입니다.
The second fermentation takes patience.

이게 이제 막 병에 담긴 와인인데 여기에 한 5년 정도 저장되어 있을 예정입니다.
This is a wine that's just been bottled. It will be stored here for about five years.

그 다음 단계는 여기 보이는 이 침전물을 제거하는 것입니다
And then we're going to get rid of this sediment.

먼저 병을 돌려줍니다. 한달 동안 병을 돌린 다음 보관대 위에 올려놓을 거고요.
So first, we turn the bottles. We'll turn the bottles for a month.

이렇게 움직여서 병을 돌릴 것입니다.. 실제로는 너무 빨리 하고 있군요 그래서 점점 병을 뒤집어 세우게 됩니다.
We'll move and turn the bottles like this. Actually I'm doing it in fast-forward, So you end up turning the bottle upside down.

저는 좀 빨리 했는데 보시면 여기 층이 점점 내려오는게 보이죠 내려오기 시작했네요 그래서 보시면 우리는 이 병을 천천히 돌려서 침전물이 병목에 고이도록 합니다.
I did this very quickly. So, the bottle, you see the lees there, it's cloudy and it's right in the middle, but it's already starting to go down. So you see, we are going to turn the bottle delicately so that the sediment is trapped in the neck.

그리고 나서 침전물을 빼내는 데고르주망(degorgement)을 하죠.
And then there's the disgorgement (Degorgement).

조금 이따가 병을 분리하는 방법을 보여드릴게요 이 작업을 데고르주망(degorgement)이라고 합니다. 그래서 이 부분의 더이상 필요없는 침전물을 제거하고 버블감이 충분한 훌륭한 와인을 만들 것입니다.
I'm going to show you how to disgorge a bottle. This is what we call Degorgement. We're getting rid of the lees to produce a wine that is both sparkling and brilliant.

For me, champagne signifies something special. It's something that people can enjoy and bond over... It's something that unites us.

We invented an uncorking tool. It's very easy.

정확히 MV는 무슨 뜻인가요?
What does MV mean exactly?

MV 는 Multi Vintage의 약자이고, 19가 붙었으므로 기본적으로는 2019년 생산된 샴페인입니다.
MV means multi vintage. So this is MV 19, which means the vintage has a 2019 base.

하지만 이 와인에는 1990년부터 2018년도 까지 저장되있던 리저브 와인에 2019년 와인이 또 들어가는거죠.
But this vintage also contains reserve wines from 1990 and up to 2018.

We have a 40-year history with the Argonne Forest. We work with different terroirs in the Argonne forest Not only do we harvest here, We can select our own trees, and the various terroir within the forest leaves their signature on the wine.

One of these press actually holds so many grapes that would the juice that comes out would fit into one barrel. So one press one barrel.

리슬링과 라인가우, 왜 그렇게 오랜 세월 동안 훌륭한 조합이었을까요?
Riesling, Rheingau, why is that such a great link and has been since so many years?

그 당시 수도사들이 이 지역, 라인가우에서 포도 재배를 시작했습니다. 그리고 수년에 걸쳐 어떤 품종이 기후에 가장 잘 맞는지 찾아야 했죠..
Back then the monks, they started cultivating wine here in the area Rheingau also through the years had to see which varietal copes best with the climate.

그래서 아마도 처음에는 다른 포도 품종으로 시작했을 거예요. 피노눈아나 클레오퍼트 같은 품종일 수도 있죠! 하지만 늦은 서리 때문에 문제가 생겼어요.
So probably they started with other grape varietals, could be Pinot Noir, Cleoprot, but there was an issue with obviously late frost and the whole harvest would be gone.

수확도 못하고 농사가 물거품이 됐었죠. 그래서 리슬링의 재배가 더욱 중요해졌습니다. 리슬링은 늦게 익기 때문에, 다른 품종보다 늦서리의 영향을 덜 받았어요.
So the development that the growing of Riesling became more important was also due to the later ripening of the Riesling and therefore it was not affected with late frost as much as other grape varietals.

여기 보시면 라인가우 전통 크기의 목재 배럴들이 있습니다. 이 배럴들은 참나무로 만들어졌고 1,200리터 용량이죠. 이 배럴에서 숙성된 화이트 와인을 발효시키고 미세 산화를 위해 저장합니다. 툼베르크(Turmberg) 포도밭에서 나온 포도들도 여기서 발효시켜요.
Here you see the traditional Rheingau sizes of wood barrels. These are wood barrels, oak 1200 liters and in this wood barrels we fermented our great dry wines and also the storage we have for the micro oxidation. Also the Turmberg, we ferment in this wood barrels.

I'm the fourth generation and my children are the fifth generation.

My whole childhood I stay also at Robert Weil Estate and therefore I have a very very close contact with this region, with this winery, with the nature and especially with the wine grower.

제 증조부는 이 지역을 자주 방문하셨어요. 그리고 1867년에 첫 포도밭을 구입했죠. 당시 라인가우의 리슬링 와인은 매우 높은 명성을 가지고 있었기 때문에 좋은 투자였어요.
So my great grandfather visited very often this region and he bought in the year 1867 his first vineyards. This was a very good investment in this time because Rheingau Riesling wines have a very high reputation in this time.

그 당시에는 부르고뉴 레드와 화이트 보르도, 라인가우 리슬링, 샴페인이 최고의 와인으로 꼽혔습니다. 이것이 증조부가 와인에 투자한 이유였고, 우리 가족 모두가 이 사업을 시작한 이유입니다. 할아버지와 저의 아버지 그리고 지금은 제가 4세대이고 제 자녀들도 이 와이너리에서 와인 사업을 시작했어요.
Burgundy red and white, Bordeaux, Rheingau Riesling and this was Champagne and this four great wines in this time were in the leading position and this was the reason why my great grandfather invested in wine and my whole family start in this business, my grandfather, also my father and now I'm the fourth generation and also my children started in the wine business in this winery.

You produce only Riesling, correct?

Only Riesling. 100% Riesling because we have one of the greatest terroirs all over the world for the grape Riesling. We have this very long experience that we have the best terroir for Riesling wines.

So when you taste Turmberg, what are the key flavors or aromas you look for?

주로 토양 유형에 기반한 맛입니다 이곳 토양은 필라이트 슬레이트인데요 그래서 와인이 매우 좋은 미네랄리티를 보여주며 복합적인 과일 맛과 충분한 바디와 풍부함을 보여줍니다 전형적인 드라이 스타일이죠
Taste base mainly on the soil type. It's phyllite slate. So the wine shows a very good minerality, it shows an complex fruit, but also enough body and richness. It's absolutely dry style.

라벨에 "Trocken"이라고 적혀있네요 라인가우 와인은 항상 드라이 했나요?
We see "Trocken" on the label. Is that how Rheingau has always been or was it traditionally more sweet?

아니면 전통적으로는 더 달콤했나요? 예전에는 단맛이 조금 더 강한 전통적인 스타일의 와인 비율이 더 높았습니다 오늘날에는 점점 더 드라이 스타일 와인에 더 집중하고 있어요 그래서 와인들이 완전히 드라이하죠
In former times we have an higher percentage of traditional type of wine with a little bit more sweetness. In today's time more and more the focus is on the dry style wine.

그렇기 때문에 라벨을 살펴보는 것이 중요해요 이 와인들은 "Trocken"이라고 적혀있는데 Trocken"은 "잔류 당분이 없다"는 뜻이죠.
The wines are absolutely dry. It is important to look on the label. This wines have "Trocken" and "Trocken" means without any residual sugar.

아시다시피 대한항공은 일등석에서 Kiedrich Turmberg 와인을 제공하는데요 왜 이 와인을 선택했다고 생각하시나요? 또이와인과 함께 먹고 싶은 한국 음식이 있을까요?
So as you know, we are pouring the Kiedricher Turmberg on Korean Air First Class. Why do you think we chose it? Is there something that you would like to eat from Korea with this wine or?

네, 물론이죠 제 생각엔 한국 음식은 지나치게 기름지지도, 또 너무 무겁지도 않죠. 그리고 이 와인도 너무 무겁지 않아요 균형이 잘 맞고 전반적으로 음식과 잘 어울리죠
Yes, of course. I think also Korean food is not too rich, not too heavy. And also this wines are not too heavy. They are very well balanced, but also with Asian fruit in general.

이 와인을 선택한 이유 중 하나는 매운 요리와 잘 어울린다고 생각하기 때문입니다 특히 김치나 고추장 같은 매운 요리와 잘 어울리기 때문이죠
Yeah, it was one of the reasons why we chose this because I think with some of the most spicy dishes, especially with kimchi or some of the chili paste, then I think this works very, very well.

Yes, this is the border between the vineyard Gräfenberg and the vineyard Turmberg. It's a small vineyard, only 3.8 hectare as a mono pole vineyard and is an vineyard with a very very strong character of wine type.

The terroir of a Turmberg is a hillside vineyard, not too hot terroir. Main aspect is a long hang time, the limited sugar content in the grapes that is possible to have more than 120 days after blooming hang time.

이렇게 작고 건강한 포도에 집중하기 때문에, 손으로 수확하는 것이 매우 중요합니다. 당 함량이 적다는 것은 와인의 알코올도 적다는 거죠. 개성이 넘치는 와인을 생산 할 수 있고, 이것이 절대적으로 중요한 요소라고 생각해요 와인의 알코올 함량이 너무 높으면 와인의 우아함, 성숙도 밸런스를 해치기 때문입니다
And based on this concentration of small grapes, very healthy grapes, it's very very important to harvest by hand picking, very healthy grapes. And the limited sugar content means limited alcohol content in the wine. You can produce a very unique type of wine. And I think this is an absolutely key factor because too high alcohol in the wine works against the elegance, the ripeness and the balance in our wines.

That was a first for me seeing where the wood for the oak barrels comes from and then heading to my home country Germany in the beautiful area Rheingau, one of the most historic Riesling regions, seeing the history of Riesling and Rheingau at the Monastery Kloster Eberbach and tasting a lot of Riesling and learning how it's made at the beautiful estate of the Robert Weil team.
