In the film, Korean Air EVP David Pacey says wine is part of a luxury travel experience that recalls the golden age of travel. To match a changing customer base the airline decided to change its wines, and Marc Almert, then the world's best sommelier, chose about 50 wines from some 200 candidates, spanning the Old and New Worlds. The series introduces three of those regions: Australia, Europe (France and Germany) and California's Napa Valley.

What is Henschke's Mount Edelstone?

A single-vineyard Shiraz that Henschke has made for about 70 years, with more than 60 vintages. The vineyard is 16.7 hectares (40 acres) of Shiraz planted in 1912, facing east away from the hot afternoon sun. The film describes blackberry, fresh sage, whole black pepper and bay leaf aromas with soft tannins.

How does Henschke farm its vineyards?

A family winery founded in 1868, now run by the fifth generation, Stephen and Prue Henschke, with the sixth generation. Viticulturist Prue Henschke farms more than 100 hectares focused on Shiraz and Riesling and calls her approach 'Prue-dynamic' rather than biodynamic: pressed grape skins are composted and spread under the vines, straw mulch and native plants manage soil and insects, and sheep graze the vineyards.

What kind of winery is Murdoch Hill?

    Why is wine so important? It's part of that luxury travel experience. It's one element of that, you know, harkening back to the golden age of travel. You know, when you used to dress up, look very nice, you know, you had wonderful meals served on beautiful chinaware in an elegant cabin.

    So, the wine actually just is one part of that piece. As our passenger profile changes, we've decided that we wanted to change the wines that we offer to these passengers.

    We were introduced to Mr. Marc Almert, who at that time, he was the world champion sommelier. And we asked him, we said, "Hey, what are you doing? We have a project that we'd like you to work on." He wrote back and he said, "Yes."

    If you look at the map of Australia, of course, there's a lot of outback, which is not ideal for grape production. That's why most of the wine producing areas are towards the southern coasts of the continent. One key factor to keep in mind is that most of the famous wine regions are nestled around the political capital of the area, Adelaide. And this is also where we'll be traveling the next couple of days, showing you some beautiful vineyards in Adelaide Hills, as well as in Eden Valley and Barossa Valley.

    So obviously coming from such a youthful wine, 24, looking at the 22 harvest which was quite similar in some regards, also very low yielding vintage.

    We produce a 50/50 blend of the Piccadilly Valley and the Lenswood vineyard. I tend to find that Lenswood has a little bit more sunshine in comparison to Piccadilly, so it gives probably a bit more depth of colour to the wine, a bit more tannin structure, whereas Piccadilly has always seemed to be

    always seem to be foggy and misty and just that little bit less sunshine than Lenswood and find the wines there to be very pretty, very aromatic. I really love the blend of the two sub-regions within the Adelaide Hills to produce. I guess I'm always looking for deliciousness in my wines and

I love dangerous. I think you empty the glass quite quickly. It's not saturating at all. It's really very delicate like you

    I think that probably appears to be the style of wine that I try and seek. You know, that is high drinkability, but with enough interest and complexity sort of elements to the wine to be, you know, food friendly and also long lived as well.

    Can you tell us a little bit about the name, the Phaeton?

    Certainly yeah so I guess when I started this range of wines with my brother in 2012 I wanted each wine to have its own unique identity and story to tell and so each wine is slightly different in an expression.

    Michael wanted a new label so we thought about it for a while and we thought we'd use the idea of my grandfather and his collection of horse-drawn vehicles as some inspiration. So we sort of came up with these names and one of the horse-drawn vehicles is called a Phaeton and so we have the photo here of my grandfather driving it. and so I thought it'd be

    so I thought it'd be a good way. But I didn't really want it to be overtly look like a horse-drawn vehicle because it might look a bit too sort of old-fashioned so then it was about sort of typography and making it quite simple and elegant and that's something that created a bit of interest. I also don't think really there is any other wine labels like it in the wine store so it stands out in the wine store quite a lot as well.

    좋은 방법일 거라고 생각했죠. 하지만 라벨에 너무 대놓고 마차를 넣고 싶진 않았습니다. 자칫하면 너무 구식으로 보일 수 있으니까요. 라벨의 글씨체에 대해 말씀드리자면 꽤 단순하면서 우아하게 만들었는데요. 저희 와인 라벨이 꽤 특별하죠. 눈길을 사로잡는 라벨이거든요. 와인샵에서 보면 저희 와인 라벨과 같은 디자인은 어디에도 없는 것 같아요. 그래서 와인샵에서 눈에 확 띄죠. 꽤 많이요.

    We've come into our fermentation area and barrel maturation. It's very small, very hands-on here at Murdoch Hill. We're only a small size winery, so there's a lot of detail in the processes.

    into here. So this was picked about a week ago. We tend to start the fermentation with gentle pump overs. So what we're trying

    to do here is just push down the skins and just extract all the colour and flavour out of those skins because the CO2 pushes those skins up and they float on top. So we do this twice a day. You want to go? Sure.

    Gotta get your hands steady. As you can see, it's kind of like a big soup at the moment, isn't it?

    So it's still a family-run winery from what I understand? - That's right, yeah, yeah. So my parents, Julie and Charlie Downer, they established the wine brand in 1998 here on the property that we've been farming since 1930s. My brother and I run Murdoch Hill and really just striving to produce the absolute best that we possibly can.

    Yeah, we were speaking about it, that it's quite a dangerous wine because with its acidity it's something you can drink very quickly. That's right, very dangerous.

    have like a family lunch or something but sometimes the bottle just disappears and just in that swim you know it's delicious.

    Charles, how is it now for you to see your sons taking over the winery slowly?

    Yep.

    Yeah, it's probably worth mentioning that, you know, 1998, we celebrated 25 years as a wine producing family last year, which was a milestone. And, you know, things have definitely evolved over those years. And you've seen the facilities and how that's grown and acquisition of Lenswood Vineyard. So, yeah, quite an achievement. Cool.

And obviously in SA we have some of the best beaches as well. I know that's a bit biased, but it's pretty incredible.

    I'm the viticulturist, so I look after just over 100 hectares of vineyard, and so we've got quite a range of varieties, but main focus is Shiraz and Riesling. And...

    I think the Eden Valley Shiraz has a sort of lighter red fruited style and the herbal notes from Mt. Eddleston are particularly, I guess that's what Mt. Eddleston is, that Bailey heather. What does Andrew Caillard, Master of Wine, says 'scent of place'.

    Mount Ittleson is actually a unique wine, it's a unique wine for Henschke because we've been making it now for something like 70 years so we've released over 60 vintages of Mount Ittleson and from then on this wine has been one of the key wines in Australia and is known pretty well now around the world So it has a true sense of place because

    because the aroma profile of Mount Edelstone is like blackberry fruits, fresh sage leaves, black peppercorns. It has these lovely herbal flowering spices, aromas. It's very pretty, very fragrant and very velvety tannins on the finish.

    - Do you think that's more due to its exposure or due to its soil or the age of the vines? What brings about that character?

  116. Prue Henschke

    I guess arrangement of all those things, so deeper soils perhaps. The aspect is towards the east so it avoids any hot afternoon sun and yeah, I guess it's in the cooler part of Eden Valley so it produces more of that red fruited, not that heavy.

    제 생각에는 그런 모든 요소들이 다 종합된 것이라고 생각해요. 가장 깊은 토양을 갖고 있고 포도밭은 동향이어서 뜨거운 오후의 햇빛을 피할 수 있어요. Eden Valley의 더 서늘한 곳에 있기 때문에 와인이 좀 더 붉은 과실 풍미를 내고, 그렇게 무겁지 않아요.

    Very continental climate because we're higher, wetter, colder and we have larger day-night temperature differential. And that's really important for varieties like Shiraz and varieties like Riesling because those cold nights build the acidity in the wine and the warm sunny days then give you the sort of flavours, the aromatics, the sort of fruit characters and the colour. colour and what have you. So we get quite lovely deep colour from the Shiraz. The tasting of the grapes in the vineyard is really important because you're looking for flavour but you're also looking for tannin maturity and that velvety-ness of Shiraz is something that makes Shiraz very attractive because it's not astringent, it's actually quite textural and fine and delicious and gives you beautiful length on the palate.

    Wow. So we've just seen the grapes being pressed off from a ferment that's finished and this is actually quite dry. So the skins have been pressed out and this will go up onto the compost pad and become compost which we use under vine. So it's, I mean it's beautiful. Does it taste very

    Yes, under vine we've got straw mulch and also compost. So that was part of the compost from the skins you used in the winery? Yes, so that's the compost that we put under the straw and you can see there's not much actually left. It's all been integrated into the soil and it's always well up under a mulched situation so it makes the winemakers very happy.

    Yes, I think a lot of the aspects of my vineyard management sort of fit into regenerative viticulture. We definitely use a lot of compost under vine to help with the soil health. We use a lot of native plants. Being a botanist, I know what I would like to see in the vineyard. insect drawing plant. The wasps love it, and so that helps with insect control. We graze with animals, so mainly sheep. We've got plenty of kangaroos as well, but we use sheep to help us control the vineyard sward. And then I guess the other thing is, yeah, it's looking after a very old piece of history.

    Yes, I think a nice way to look at when you're sitting in your passenger seat flying somewhere and you have this glass of 2016 Mount Edelstone is just to look at the colour, look at the aromas and think of the vineyard in South Australia that's sitting on this beautiful little slope surrounded by big red gum trees. flowers in the vineyard, happy vines that greet the morning sun, all the delicacy and fragrance and then enjoy the flavours of the Shiraz, that lovely rich dark blue, black fruit flavours and the elegance and the fine tannins and have something beautiful from Korea Airlines to enjoy it with.
